Panos Saris spent years on the other side of wine, as a Sommelier! With distinctions and experience in restaurants in London, he created a gastronomic 'taverna' on the island's most beautiful beach. The wine bug was eating him up, so he decided to make his own wines, from local varieties, with gentle natural fermentation, to accompany his dishes.
Tsaoúsi is one of the rarest varieties on the island, but it has shown great potential. That's why Panos Saris chose it for his second Orange wine (the first being the beloved V for Vostilidi). The vineyards are autochthonous, 40 years old, located in the Leivatho region. The wine fermented with indigenous yeasts and remained with the skins for 2 weeks in stainless steel tanks. The result has a robust structure and very intense aromas of yellow fruits such as quince and citrus.
